Corinchi crudo

• 1 o 1/2 corinki
• sale
• Pepe nero
• olio di semi di zucca
• Aceto (va bene anche il balsamico o il succo di limone)

Lavare l’esterno del korinki. La buccia è commestibile, ma leggermente cerosa. Per questa ricetta, sbucciate la pelle. Grattugiare i Corinchi usando una grattugia. Usa taglia grande o media. In una ciotola mettete olio, pepe nero e aceto.

Nota: Corinchi può essere associato alla zucca di ghianda, ma è più associato alla zucca giapponese. Puoi anche usare un pelapatate per affettare sottilmente. I semi di Corinchi sono dolci. Non rimuovere.

Seconda ricetta: se si utilizza un coltello, affettare a fette spesse 1 mm o 2 mm. Poi prendetene le fette e fate una vinaigrette. Conservalo per diversi giorni. In questo modo, le verdure diventeranno bianche e diventeranno molto deliziose come sottaceti per riso sushi.

生こりんき

• こりんき 1本または1/2本
• 塩
• 黒コショウ
• パンプキンシードオイル
• 酢（バルサミコやレモン汁でも可）

こりんきの外側を洗います。皮は食べられますが、わずかにワックス状です。このレシピでは、皮をむきます。おろし金を使ってこりんきをすりおろします。大または中サイズを使用してください。ボウルに油、黒こしょう、酢を入れる。

注: コリンキはどんぐりカボチャと関連付けることができますが、日本のカボチャとより関連付けられています。ピーラーを使って薄くスライスすることもできます。こりんきの種は甘みがあります。それらを削除しないでください。

2番目のレシピ: ナイフを使用する場合は、1 mm または 2 mm の厚さにスライスします。次に、スライスを取り、ビネグレットにします。数日間保管してください。こうすることで野菜が白くなり、すし飯の漬物としてとても美味しくなります。

Raw Korinki

• 1 or ½ a Korinki
• Salt
• Black Pepper
• Pumpkin seed oil
• Vinegar (can be balsamic or lemon juice)

Wash the outside of the Korinki.  The peel is edible but slightly waxy.  For this recipe remove the peel.  Use a grater and grate the Korinki.  Use large or medium size. In a bowl, add oil, black pepper and vinegar.

Note: The Korinki can be associated with an Acorn squash, but it is more related to the Japanese Kabocha.  You can also use a peeler to make thin slices.  The seeds of the korinki are sweet in taste.  Do not remove them.

Second recipe: If you use a knife, cut 1 or 2 mm thick slices.  You can then take the slices and vinaigrette them.  Store for a couple of days.  This will bleach the vegetable and it will taste really good with sushi rice as a pickle.
