Polpo in stile Galego

  • Polpo ~200 grammi

patata

fette

Galego-style Octopus

  • Octopus ~8 oz
  • 10 Small or medium potatoes, enough to cover a pan
  • 6 tablespoons Olive oil
  • Salt
  • Paprika (sweet)
add

Parboil the octopus for 20~40 with a real cork.  In a separate pot, boil the potatoes for ~40 minutes.  Once both the octopus and potatoes are cooked, remove from water and let cool down.  Slice the potato and Octopus into 0.5 cm thick slices.  Heat oven to 430 F.  In a wide pan add olive oil.  Add sliced potatoes, and make sure they are coated with olive oil by flipping potatoes.  Add the octopus rounds on top of the potatoes and coat with olive oil.  Finally add paprika and salt over everything.  Bake in the oven for 20 minutes.  Octopus must come out crispy.

Note:  This is a very tasty Spanish dish that works well with Japanese octopus.  This goes well with red wine.
