Patata dolce con Mascarpone

• Patata dolce (patata di okinawa), 2 medie
• Mascarpone 3~4 cuciaioni
• 1 Mela
• Opzione succo di Limone

Pulire e accartocciare le patate in carta stagnola.  Infornare le patate per circa 45 minuti a 220 C.  Lasciar raffreddare.  Sbucciare le patate.  In una ciotola aggiungere patate e mascarpone.  Spiaccicate le patate con il mascarpone finché diventa omogeneo.  Sbucciare una mela e tagliate a fette sottili.  Se la mela è troppo dolce, spruzzare un po ‘di limone sulla mela.  Aggiungere un cucchiaio di miscuglio sulla fetta di mela e servire.

Nota: Questo piatto si può fare sia con la patata di Okinawa viola o patate dolce arancione.  Alternative è di cuocere le patate al fuoco e si può avere un sapore di affumicato.

• サツマイモ（沖縄産ジャガイモ）中2個
• マスカルポーネ 大さじ3～4
• リンゴ1個
• レモン汁はお好みで

ジャガイモを洗い、ホイルで包みます。ジャガイモを220℃のオーブンで45分ほど焼きます。冷めるまで放置します。ジャガイモの皮をむきます。ボウルにジャガイモとマスカルポーネを加えます。ジャガイモをマスカルポーネと一緒に滑らかになるまでマッシュします。リンゴの皮をむき、薄いスライスに切ります。リンゴが甘すぎる場合は、リンゴにレモンを少し振りかけてください。スプーン一杯の混合物をリンゴのスライスに加え、お召し上がりください。

注：紫やオレンジ色のさつまいもでも作れます。ジャガイモを火で調理するとスモーキーな風味が生まれます。

Sweet Potato with Mascarpone

• Sweet potato (Okinawa potato), 2 medium
• Mascarpone 3~4 tablespoons
• 1 Apple
• Lemon juice option

Clean and crumple the potatoes in foil. Bake the potatoes for about 45 minutes at 425 F. Leave to cool. Peel the potatoes. In a bowl add potatoes and mascarpone. Mash the potatoes with the mascarpone until it becomes smooth. Peel an apple and cut into thin slices. If the apple is too sweet, sprinkle a little lemon on the apple. Add a spoonful of mixture to the apple slice and serve.

Note: This dish can be made with either purple Okinawan potatoes or orange sweet potatoes. Alternatives are to cook the potatoes on the fire and you can have a smoked flavor.
